Cheesemakers see rising demand for specialty products

Americans' expanding palettes and interest in the foods they eat have been a boon for California producers and sellers of specialty and artisanal cheeses, and many of those who attended the 31st annual American Cheese Society conference last week said they are upbeat about how this vibrant food movement has spurred their business.
